Dark is Making its Mark, Perhaps

Here is a story from the BBC about Cadbury's release of a new "dark" chocolate. I put the quotations around dark because it contains milk or milk fats, primarily. Also they call it "deeply dark" when it's only 60% cacao. That's the sweetest that the Cluizels make their dark chocolate.


It's quite obvious that there is a general disregard for the general public by the large manufacturers. I only hope that the small makers are able to compete. And I think it's very ironic that this same phenomenon happened in the late 19th Century and early 20th Century. This was when Hershey's and Cadbury and Lindt first came into the American market place with cheap, waxy, and affordable chocolate bars. I see they are adjusting to the American tastes by changing their product lines.


I think the most interesting thing about this article is a brief mention about Hershey laying off over a thousand workers. And their "signature" line is produced in Germany. Why?
