I met Michele de Luca-Verley who was in the midst of preparing some of her newest creations. She specializes in combining the finest tea flavors with chocolate, presumably by brewing tea into the ganache cream before adding to the chocolate. Her Orange Blossom truffles were satisfying by pushing the dark, tannic tea notes directly against a deep dark ganache, it resulted in a bold rush of grape to lemongrass flavors ending gently on a soft finish.
We also downed a great drinking chocolate worth recommending- Liquid Chocolate Plum Oolong. Just chocolate and brewed tea. So elegant and amazing. Great experience!
